Mini Apple Pies: Grain-Free, Gluten-Free

I made these!!!

It sounds pretty unbelievable to me because I never baked anything like a pie before. I made muffins once or twice and that’s about it.

I’ve been trying to stay away from grains and gluten and see how that goes. It’s hard to stay 100% away from things like bread and rice, so every now and then some slip through the cracks – specially at asian or mexican restaurants – but for most of the time I am actually doing much better than I had expected. (I also stopped drinking soda, that’s going well too).

Anyway, I’ve been meaning to try some baking with grain-free, gluten-free stuff such as almond and coconut flour. And voila – these mini apple pies were it.

I must say baking it was very easy and I will do few alterations for next time (I want more apple yumminess and a little bit less crust).

This is not suppose to be the kind of thing that you include on your daily diet unless you’re an athlete – almod and coconut are pretty high in calories. But, for an occasional treat, they’re excellent.

The filling was pretty much standard. The mandoline surely helped. I used a very small quantity of a light butter/canola oil mix. The crust is already sweet due to the honey, so the apples did not need any sugar or anything.

I’ll be doing a bigger one soon, probably an apple/pear mix.


Shrimp and Zucchini Salad

I made this the other day for lunch. It was pretty delicious. And easy.

I got the shrimp pre-cooked and grilled it with salt and pepper in my little George Foreman.

I sliced the zucchini, seasoned with salt and pepper and roasted it in the oven along with some garlic and onions.

The leaves are a combination of a lettuce blend and baby arugula (I’m a bit addicted to arugula, I think it goes well with everything). I put a tiny bit of olive oil on top of it… not much though, I’m not a fan of dressing.

Voila! Quick and tasty, for people that are not very talented in the kitchen – like moi.

A blog about cooking experiences/experiments

I don’t know much about cooking. I watch a lot of tv shows about it, though. Iron Chef, Top Chef, Masterchef, Hell’s Kitchen, Chopped, The Next Food Network Star… As most people who watch these shows, I’d like to believe I have picked up a few things here and there. I’m probably wrong, but never mind that.

The fact is I’ve been trying to cook a lot as of recently, and I’m eager to learn. I’ve also been trying to eat healthier. Altogether, that means that I’ve been attempting to cook a lot of vegetables and lean proteins, while trying to avoid empty carbs, processed foods, gluten and grain. I’ve also quit soda (six weeks and counting…), which is a huge step for me.

However, I’m not an all-or-nothing kind of gal. I believe in balance. So I do still eat a lot of these things. I absolutely can’t get rid of yogurt and dark chocolate, for example. And I would never completely give up rice and bread, but I have drastically reduced the consumption of these items over the past couple of months.

So the idea here is just to post some of the things I’ve tried to make or that I’ve eaten somewhere. In principle I would just love to have some sort of recipe collection for myself, and that’s what this is. But maybe other people will enjoy it and help me by giving advice, sharing recipes, etc. All input is welcome!
